Fairchild's Organic Apple Cider Vinegar is 100% organic apple cider vinegar from the USA, produced from certified organic apples using natural fermentation. Acidity 6.3% – slightly higher than the European standard of 5%, resulting in a distinctive, slightly sharp flavour profile.

The unclarified, unfiltered and unpasteurised version retains the natural cloudy sediment from the complex fermentation enzymes (the equivalent of ‘Vinegar Mother’). This is a sign of raw, minimally processed vinegar. Standard 473 ml (16 fl oz) bottle size – a classic American measurement. Sufficient for regular use in the home kitchen for 1–2 months.

Usage

Vinegar for salad dressings, meat and vegetable marinades, vinaigrette sauces, raw vegetable salads, pickled and marinated gherkins. It also works well as an ingredient in homemade refreshing drinks (with water, honey, ginger) and non-alcoholic cocktails. A natural preservative in homemade preserves.

Directions for use

Shake before use – the natural sediment will disperse when shaken. For a dressing: 1 part vinegar to 3 parts extra virgin olive oil, salt, pepper. For a marinade: one tablespoon per 250 ml of marinade liquid. For a refreshing drink: dilute 15 ml of vinegar in a glass of water, add a teaspoon of honey and a slice of ginger. The distinct acidity of 6.3% means that smaller quantities are sufficient compared to standard 5% vinegars.

Storage

Store in a cool, dry place. Once opened, it does not need to be kept in the fridge. Natural sediment at the bottom of the bottle is a sign of high quality – it is not a defect.
